Easy Christmas Treat Recipe by Erika Tan-Sapin
I discovered her Instagram page through Threads. Seeing all her recipe videos will make you want to try everything ! She love making simple but delicious recipes that she shares daily. Simple recipes are best especially when the Christmas holidays come and everyone rushes into stores to buy gifts, decorations, food, accessories etc… If you are someone who enjoys testing different things every day, you won’t get bored with her videos !
Let me share with you a great and simple recipe Erika San-Tapin called Mini Xmas Pillow Bites. I tried making some last year but it didn’t turn out like this. I wish I knew at the time, but better late than never !
INGREDIENTS:
- 3 cups organic gluten-free cornflakes cereal
- 1/2 cup peanut butter or tahini (or mix both)
- 2 1/2 tbsp maple syrup
- 130g melted vegan dark chocolate
- 1/2 tsp pink salt
- Christmas toppings
How to:
- Blend cornflakes in a blender until completely grounded up. Pour into a mixing bowl.
- Add smooth peanut butter and maple syrup to the cornflakes at mix until well combined.
- Use your hands to roll them into small oval shapes and place them onto a plate/pan lined with parchment paper.
- Set in the freezer for 10-15 min.
- Melt dark chocolate and some salt in a bowl and let it cool a little.
- Dip the mini bites into the melted chocolate, sprinkle with Christmas toppings, and refrigerate them for at least an hour.
